Can vacuum aging produce whiskey characteristics?

The Question
Barrel aging is a bundle of separate processes that happen to share a container: extraction of wood compounds, oxidation, evaporation, and slow chemical reactions among all of the above. We wanted to unbundle one corner of it. If we hold spirit and oak under reduced pressure — and cycle that pressure — can we speed up the wood’s contribution and get something that reads as “whiskey-like”? Or does the vacuum change the character of what we extract?
Setup
Small glass reactor vessels, each with the same spirit and a measured charge of toasted American oak. One vessel at ambient pressure as the control. The others under vacuum, some held steady, some cycled — pulled down, held, released, repeated — on the theory that pressure swings move liquid in and out of the wood’s pore structure faster than soaking alone. Same room, same temperature, sampled on the same schedule. We log color and aroma at every pull and taste as a small panel, blind where we can manage it.
Observations
Color moves fast in every vessel — faster than we expected in all of them, including the control, which is a good reminder that small volumes with generous wood contact are already an acceleration. The cycled-vacuum vessels do seem to pull color and wood aroma ahead of the steady ones, and the early nose on them is promisingly sweet: vanilla, toast, something like pastry. But there’s a gap we can’t ignore. Everything so far smells like oaked spirit, not like whiskey. The round, integrated, slightly oxidized character of an aged spirit isn’t showing up, and honestly we didn’t expect it to — a vacuum is a strange place to look for oxidation, since we’re actively removing the air. One cycled vessel also developed a sharp, green edge we didn’t like; we suspect we stripped some volatiles we’d rather have kept, but we haven’t confirmed that yet.
What We Learned
Extraction is the easy part, with or without a vacuum. The vacuum’s real effect seems to be on rate and possibly on selection — what gets pulled from the wood and what gets pulled out of the liquid. Vacuum alone will not make whiskey; if anything it may fight one of the processes that matters most. The hypothesis is narrowing: cycled pressure for wood work, followed by a separate, deliberate oxygen step. Which is experiment #074’s territory, and one reason that experiment exists.
Next Time
Keep the current vessels running — the several-month horizon is the point. Add a paired series where vacuum-extracted spirit gets a controlled air exposure afterward, and taste against the straight-vacuum siblings. And fix our sampling habit: we’ve been opening vessels to smell them, which quietly breaks the vacuum we’re supposed to be studying. The next generation of vessels gets sample ports. Sometimes the experiment’s biggest finding is a flaw in the experiment.
