Oak Extraction

What does oak actually contribute to a spirit — and does toasted wood give something different than charred?

Question

Whiskey is mostly a story about wood. Barrels are toasted or charred before filling, and distillers argue about the difference the way chefs argue about browning. Strip the question to its smallest version: put toasted oak in one jar of vodka, charred oak in another, and nothing in a third. What does each become?

Hypothesis

Both wood jars will pick up color and aroma within the first week. The toasted jar will lean sweet — vanilla, caramel, baking spice. The charred jar will pick up color faster and add smoky, roasted notes. The control jar will stay exactly what it was, which is the point of a control.

Materials

  • A bottle of Valence Vodka
  • Food-safe untreated oak cubes or spirals (homebrew shops sell them inexpensively) — enough for two jars
  • An oven, plus a kitchen torch or broiler
  • 3 small glass jars with tight-fitting lids
  • Masking tape and a marker
  • A dated observation log

Procedure

  1. Prepare the wood. Toast half the oak pieces in a 350–400°F (175–200°C) oven for 30–60 minutes until fragrant and evenly browned. Char the other half: after toasting, blacken the surfaces with a kitchen torch or under the broiler until they visibly char, then let everything cool completely. Work with ventilation and keep all open flame far from any alcohol.
  2. Fill each of the three jars with 2 ounces (60 ml) of Valence.
  3. Add toasted oak to jar one and charred oak to jar two — a similar amount of wood in each. Jar three gets no wood. Label all three with contents and date, and lid them tightly.
  4. Store the jars together somewhere dark at room temperature.
  5. Twice a week, hold the jars up to the light and log the color. Once a week, open each, smell it, and taste a few drops from a spoon. Always check the control first.
  6. Stop each wood jar when you like where it is — or when it’s clearly gone too far. Strain off the wood, and compare all three side by side. Over-oaked samples taste bitter and sawdusty; if you get there, that’s a successful result too.

What to Observe

Color arrives surprisingly fast — often a visible straw tint within days, deepening week by week. Expect the charred jar to darken faster. On the nose, watch for vanilla and coconut notes in the toasted jar and smokier, more roasted character in the char. Track when each jar peaks: small volumes with lots of wood contact move at a pace no barrel does, and the window between “interesting” and “overdone” can be short. The control jar is your proof that every change came from the wood.

The Science

Heat rewires wood chemistry. Toasting breaks down lignin — one of wood’s structural polymers — into vanillin, the same molecule that defines vanilla, along with sweet and spicy relatives. Oak also carries its own signature compounds, oak lactones, which read as coconut and fresh-cut wood. Charring goes further, creating smoky phenolic compounds and a layer of activated carbon that can also adsorb harsh notes — char both gives and takes. Alcohol is an excellent solvent for all of this, and your jars extract far faster than barrels because the ratio of wood surface to liquid is enormous compared to a 53-gallon cask. What you can’t replicate on a counter is time’s slow oxidation chemistry — which is exactly the frontier our own lab notebook is poking at.

Conclusion

You just watched a neutral spirit become something with color, aroma, and opinion, using nothing but wood and heat. Every difference between your three jars traces to one prepared variable. This is the entire premise of barrel aging — and of our accelerated-aging research — in miniature.
