Time in the Glass
How does a pour of vodka evolve over a full hour?
Question
Experiment #004 looked at the first ten minutes of a pour’s life. What happens over a full hour? Is a glass of vodka at minute 60 the same drink it was at minute zero?
Hypothesis
The sample will change most in the first 20–30 minutes as the lightest compounds escape, then settle into a slower drift. The final glass will be quieter, rounder, and very slightly more concentrated in what evaporates slowest.
Materials
- A bottle of Valence Vodka
- 1 glass — use the winning glass from Experiment #003 if you ran it
- A timer
- Pen and paper, ruled into a table: time / aroma / taste / texture
Procedure
- Pour 1 ounce (30 ml) of Valence at room temperature. Do not cover the glass.
- At minute 0: smell carefully, then take one small sip. Fill in the first row of your table.
- Repeat at minutes 15, 30, and 60. Between readings, leave the glass alone — no swirling, no sipping. The pour has to last the hour.
- At each reading, smell before you taste, and try to describe the aroma in a word or two rather than a score.
- At minute 60, compare your first and last rows side by side.
What to Observe
The steepest change usually shows up between the 0 and 15 minute rows: the initial sharpness fades noticeably. By minute 30, many tasters describe the aroma as “settled” or “round.” Between 30 and 60, changes get subtle — which is itself the finding. Notice, too, whether the level in the glass has visibly dropped: that missing volume went into the air of the room, molecule by molecule, sorted by volatility.
The Science
An open glass is a slow, unheated distillation running in reverse order of boiling point — the most volatile compounds leave first. Early departures include the sharpest ethanol prickle and any trace light compounds; heavier, slower molecules stay behind and gradually make up a larger share of the aroma. Your nose complicates the readings in an interesting way: prolonged exposure to a smell causes adaptation, where the nose stops reporting a constant signal. That’s why this experiment uses spaced readings with rests — you’re giving your sensors time to reset between measurements, the same reason lab panels limit how many samples they assess in a session.
Conclusion
A pour is a process, not a snapshot, and most of its evolution happens early. If you liked minute 30 best, you’ve learned something practical: give a neat pour a rest before judging it. If minute 0 won, you now know to drink your vodka young.
Variable Tested
Elapsed time after pouring, with everything else — glass, volume, temperature, location — held constant.
